The barrels will transmit the wine resting in them aromas and flavors of each type of barrel, these nuances will the wine faster the newer the cask. In the cask wine aromas evolve notes losing their flowers and fruits to make wood tones (vanilla), spices or even mineral. And there tasters able to tell if the wine has been aged in French and American oak.
